This recipe makes one pound of meatballs. You can also make a
half pound batch.
In a medium bowl combine
- 1 egg
- 3 TBSP bread crumbs
- ½ tsp salt
- a grind or two of pepper
- ⅛ tsp nutmeg

Mix in
Mix it all up then make 4 ½ cup, 6 ⅓ cup or 8 ¼ cup meatballs. In a frypan with a good lid heat up
Then fry the meatballs in it until well browned all over. Remove meatballs to paper towel temporarily. Discard oil but leave brown bits.
Return meatballs to frypan. Then add |
- 1 cup chicken stock or tomato juice
And cook covered for
25 minutes at simmer. If you used chicken stock, make it into a gravy and serve with mashed potatoes. If you used tomato juice, add a jar of spaghetti sauce and serve with pasta. |
